December 13, 2024
Preparation time
10-15 minutes (excluding soaking time)
Cooking time
45 - 50 minutes
Serves
4 - 5 people
- Chickpeas: 250 grams (Kabuli Chane)
- Bay Leaf: 1 (Tej Patta)
- Cinnamon: 2-3 inch (Dalchini)
- Black Cardamom: 1 (Badi Elaichi)
- Cloves: 3-4 (Laung)
- Baking Soda: A pinch
- Salt: To taste
- Water: As required (1 inch above)
- Soak the chickpeas in water for 6-8 hours or overnight. Discard the water and wash them thoroughly to remove any smell.
- Add the soaked chickpeas to a pressure cooker along with bay leaf, cinnamon, black cardamom, cloves, salt, water, and baking soda.
- Pressure cook over high flame for 1 whistle, then reduce the flame to medium and cook for 4-5 more whistles.
- Turn off the flame and let the pressure release naturally. Check if the chickpeas are cooked; if not, pressure cook for 1-2 more whistles.
- Discard the whole spices and set the cooked chickpeas aside.
- Onion: 3 medium
- Tomato: 3
- Ginger: 2 inch
- Green Chili: 2
- Garlic: 10-15 cloves
- Add the roughly chopped onions to a blender and grind them into a smooth paste.
- Similarly, blend the tomatoes, ginger, green chilies, and garlic into a fine puree.
- Ghee: 2 tbsp
- Oil: 1 tbsp
- Cumin Seeds: 1 tsp (Jeera)
- Carom Seeds: A pinch (Ajwain)
- Asafoetida: ¼ tsp (Hing)
- Turmeric Powder: ½ tsp
- Kashmiri Red Chili Powder: 1 tbsp
- Coriander Powder: 2 tbsp (Dhaniya Powder)
- Cumin Powder: 1 tsp (Jeera Powder)
- Yellow Chili Powder: 1 tsp
- Dry Mango Powder: 1 tsp (Amchur Powder)
- Black Salt: A large pinch
- Salt: To taste
- Hot Water: As required
- Kasuri Methi: 1 tbsp
- Ginger Julienne: A handful (Adrak ke Lachhe)
- Green Chili: 2, sliced
- Garam Masala: A pinch
- Fresh Coriander: A handful, chopped (Hara Dhania)
- Heat a kadhai over high flame and add ghee and oil.
- Once hot, add cumin seeds, carom seeds, and asafoetida. Stir for a few seconds.
- Add the onion paste and cook over high flame until golden brown. If the paste sticks to the kadhai, add splashes of hot water as needed.
- Lower the flame and add the powdered spices (turmeric, Kashmiri red chili powder, coriander powder, cumin powder, yellow chili powder, dry mango powder, black salt, and salt) along with a splash of water. Stir well and cook for 1-2 minutes.
- Add the tomato puree and cook until the ghee separates and the masala becomes crumbly, about 10-12 minutes. Add hot water if it becomes dry and cook further.
- Add the cooked chickpeas to the masala. Stir well and simmer for 6-8 minutes until the gravy reaches a semi-thick consistency.
- To thicken the gravy faster, mash a few chickpeas with the back of a spoon.
- Dry roast the kasuri methi in a separate pan over medium flame. Transfer it to a small bowl, crush it between your hands, and add it to the gravy.
- Add ginger julienne, sliced green chilies, garam masala, and fresh coriander. Stir well.
